Dandelion
Dandelion plant taken as a vegetable, in moderate amounts is not toxic. However, we should consider that the leaves are rich in oxalates so, taken in large quantity, can cause poisoning.
About 30 fresh grams of this plant cover the daily needs of vitamin A of an adult.
Avoid dandelion greens that have bloomed.
To store in refrigerator: rinse well, wrap in a damp paper towel and place in a plastic bag. If the towel is kept moist, greens can last up to one week. |
