Tomatoes
The tomatoes should be soft to the touch. Apart from the tomato’s physical appearance, smell is the best indicator of ripeness. The cold kills their flavor.
If some of your tomatoes need ripening, place them in a paper bag with a banana or an apple for a day or two. Ripe tomatoes should be stored at room temperature, away from sunlight, and consumed within a few days.
Yellow and orange tomatoes are usually less acidic than red tomatoes. |
